Julie B's New England Coffee Cake

Ingredients
- 1/4 cup (55g) butter
- 1/2 cup sugar
- 1/4 cup unsweetened applesauce
- 1/2 teaspoon vanilla extract
- 1 cup flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Additional Ingredients:
- 1/2 cup sour cream
- Optional: 1/2 cup fruit (blueberries, chopped apples, raspberries)
Topping:
- 6 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 tablespoon shortening
- Optional: walnuts
Directions
1. Preheat oven to 350°F (175°C).
2. Prepare Wet Ingredients: In a large mixing bowl, combine the butter, sugar, applesauce, and vanilla extract. Mix until the ingredients are well combined and smooth.
3. Prepare Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until combined.
5. Add Sour Cream: Fold in the sour cream until the batter is smooth and well combined.
6. Optional Add-ins: If desired, gently fold in 1/2 cup of your choice of fruit (blueberries, chopped apples, raspberries, etc).
7. Prepare Topping: In a small bowl, mix together the brown sugar, cinnamon, and shortening until crumbly. If desired, stir in some walnuts.
8. Assemble: Pour the batter into a greased baking dish or muffin tin. Sprinkle the topping mixture evenly over the batter.
9. Bake: Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
10. Cool and Serve: Allow the baked goods to cool slightly before serving. Enjoy!
