Nina's Vegan Pancakes

Fluffy, Egg-Free, and Delicious

Light and fluffy vegan pancakes! Perfect for any time of the day, these pancakes are a great way to enjoy a dairy-free, egg-free breakfast without compromising on taste.

Ingredients

  • 1 1/2 cups flour
  • 1 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup non-dairy milk
  • 1/4 cup applesauce
  • 1 tsp vanilla extract
  • 1 tbsp melted vegan butter or oil

Directions

  1. Preheat a non-stick pan or griddle over medium heat.
  2. Prepare Dry Ingredients: Combine the flour, sugar, baking powder, baking soda, and salt in a small mixing bowl.
  3. Prepare Wet Ingredients: In a large mixing bowl, whisk together non-dairy milk, applesauce, vanilla extract, and melted vegan butter or oil.
  4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix; lumps are okay.
  5. Cook Pancakes: Lightly grease the pan if needed. Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and the edges look set.
  6. Flip and Cook: Flip the pancake and cook for another 1-2 minutes until golden brown.
  7. Serve: Enjoy warm with maple syrup, fresh fruit, or your favorite toppings.
